Raisins is the product prepared from the sound dried grapes of the varieties conforming charictisics of vitis vinifera L processed in an appropriate manner into form of marketable raisin without coating with suitable optional ingredient.
The dried grapes or raisins:

May be dipped (unbleached) in lan akline lye or oil solution as an aid to drying
Shall be properly cleaned whether washed or un washed

Definition of Defects
(a) Piece of stem- portion of branch or main stem could be embedded to the brass or loose
(b) Cap-stem –small woody stem exceed in 3mm or 1.8b inch in length with attaches the grape to branch of the bunched whether or not attached to raisins
(c) in considering allowances for cap- stem that are loos are counted as being on raisins)

(d) Damaged Raisins-Raisins affected by sunburn, scars, mechanical injury, or other similar means which seriously affect the appearance, edibility, keeping quality, or shipping quality. In "Seedless" type, normal mechanical injury resulting from removal of cap-stems is not considered "damage".
(e) Sugared Raisins-Raisins with external or internal sugarcrystals which are readily apparent and seriously affect the appearance of the raisin. Raisins that are sugar-coated or to which sugar is added intentionally are not considered "sugared raisins".
(f) Seeds-Substantially whole, fully developed seeds which have not been successfully removed during processing of seeded form

Why do some raisins have a different color?

In Iran Raisin colors vary by their drying process. For example, a dark purplish/black raisin or Black Raisin is sun-dried. A light to medium brown raisins or Sultana Raisin is dried under the shade. A golden to bright yellow raisins is dried under shade and is also treated with sulfur dioxide to retain color and is called Golden Raisin or Golden Bleached Raisins. Green Raisin is green in nature but if sulfur is added the color will have a yellowish green color to it

The following steps should be taken to determine the grading of raisins. These steps are set by the standard.

  1. Pest Test: First remove the raisins and check with the magnifying glass for insects and ticks. After this step, cut the raisins to test inside the raisins.
  2. Sand testing: We will remove the boxes if there is no sand, then move on to the next steps, but if there is sand, a few more boxes should be selected as examples.
  3. Measurement of sulfuric anhydride
  4. Humidity measurement. Humidity should not exceed 16%
